Recipe: April 2020: Salted Caramel Brownies

It’s time for another recipe! First, the recipe for salted caramel brownies. Then, me blathering onward about my occasionally questionable culinary capabilities and the memories this particular feast holds for me.

  • The Ingredients
    • Homemade Caramel
      • 1/2 cup white sugar
      • 4 tablespoons salted butter, cubed small
      • 3 tablespoons heavy cream
      • 1 teaspoon vanilla extract
      • 1 heavy pinch of salt
    • Brownies
      • 4 ounces unsweetened chocolate, melted
      • 1 stick salted butter
      • 1/2 cup white sugar
      • 1/2 cup packed brown sugar
      • 2 eggs
      • 1 tablespoon chocolate syrup
      • 2 teaspoons vanilla
      • 3/4 cup all-purpose flour
      • 1/8 teaspoon salt
  • The Way of Preparing
    1. Preheat your oven to 350°F/175°C/Gas mark 4.
    2. Prep your brownie pan: line an 8 inch square pan with parchment paper and spray with cooking spray.
    3. Prep your caramel pan: line another 8 inch square pan with parchment paper.
    4. Make the salted caramel:
      • In a small saucepan, heat the sugar over medium high heat, stirring frequently until smooth.
      • Remove from the heat and add your cubed butter. Stir it in until completely melted.
      • Add the cream and stir to combine.
      • Add the salt and vanilla and return the caramel to the heating element. Simmer for two-three minutes.
      • Pour into your prepared caramel pan and top with a little additional salt.
      • Freeze for thirty minutes or until it’s solid enough to cut into small cubes.
    5. Make the brownie:
      1. Met together the butter and chocolate in the microwave in a large bowl.
      2. Whisk in the sugar. Whisk until cooled.
      3. Whisk in the vanilla, eggs, and chocolate syrup. Mix very well.
      4. Add the flour and salt and whisk until no streaks or lumps remain.
    6. Combine most of the small caramel cubes into the brownie batter.
    7. Transfer the brownie batter to your prepared pan.
    8. Add the last few caramel squares on top.
    9. Bake for 25-30 minutes or until just cooked through.
    10. Chill in the refrigerator for easier cutting.
    11. Enjoy!
  • Notes
    • In a pinch, store-bought caramels can totally work for this recipe.
    • For extra chocolate, add a half cup of chocolate chips to the batter, or peanut butter chips!

My mother used to make something like this. She’d accidentally forgotten to add flour, once, and it basically became a baked fudge with a caramel center. It was absolutely delicious.

I’ve made these twice, once I didn’t cool the caramel sauce and just poke-caked the finished brownies with the caramel and chilled that.
