Today was the family get together at Uncle Gator’s place. We had a peanut butter cookie making contest. Me and cousin Jill lost to Bubbles.
My cookie recipe is super simple:
- 1 cup peanut butter
- 1 cup sweetener (in this case white and coconut sugar)
- 1 egg
- 1 teaspoon of spiced rum and vanilla extract
Mix, drop by rounded teaspoons onto a cookie sheet lined with baking paper, squish with a fork for that classic design, and then bake for eight and a half to ten minutes in a 350 degree oven. Cool for five minutes on the cookie sheet and enjoy!
Today is the anniversary of the Pulse shooting. I’m so sad for those that lost their lives. I’m hoping some good come of their passing. And may their memories be a blessing.
I am exhausted and I’ve been running since seven a.m. so I am off to bed.
I’ve got to be up early as J and I are going to work Uncle Comic’s booth tomorrow! Yay for wearing a mask at conventions!
