1 New Sweet Potato Casserole Recipe
Yesterday was Thanksgiving. And Wolfenoot. And Family Food Day. But mostly the latter.
Mellon and I did the cooking. He prepped the dead bird for me because I literally couldn’t handle sticking my hand into the carcass. Just couldn’t do it. But they could! So we seasoned it, threw it in a floured oven bag, and toss the bird into the oven for 2.25 hours. It came out perfect. Like, a little Tony C’s seasoning on it and it was deliciously seasoned.
We also had some gravy made with a mix of drippings and packaged stuff, a heap of garlic mashed potatoes, sage stuffing, yeast rolls, cranberry sauce, and sweet potato casserole.
For the sweet potato casserole, it was one can of drained yams, 1/3 cup of melted butter, 1/2 cup dark brown sugar, powdered ginger, ground cloves, ground cinnamon, a pinch of salt, a half cup of chopped pecans, and half a teaspoon of vanilla extract. Mix, top with more chopped pecans and air fry for ten minutes at 325 degrees. Top with mini marshmallows and air fry at 350 degrees until brown or about five minutes. So good.
We had leftovers for dinner today. Maybe some honey ham for dinner tomorrow.
I got my first Yule gift today from Ashe today! They gave me The Citadel Fantasy Oracle. It’s a gorgeous, sassy deck that I really enjoy already.
I also bought myself a book, from Half Price Books, that I’ve been wanting.It’s called ‘The Witching Year’ by Dianna Helmuth. I’m probably going to start it on Sunday.
It’s less than two weeks till my trip to Florida to see my mom’s side of the family in Tampa and some old friends. Reffie will be one of them. I’ll be spending most of Friday with her. I’m so excited. And that’s a payday so I should be fine while traveling.
Anyway, other than feeling like a dismal failure of a human being because I’m struggling so much financially, I’m all right. I’m not actively suicidal. I kind of hate myself right now, but I’m doing my best and that’s all I can do.
I’m going to go watch some trash reality television, Treehouse Masters specifically, and crochet. My current main project is the basket weave bordered blanket for Reffie’s lovely Mama. I adore her and it’s mutual. I’m putting love in every stitch.
