1/2 Cup of Applesauce Used in Gingerbread Cake
Good Yule to you all!
Four days till Christmas and I’m celebrating Yule with my Pathfinder people. I made a gingerbread cake this morning and I like it well enough to eat a full slice but I don’t know if I’d make the same recipe the same way the second time around.
I did learn, while making it, that you can sub a half cup of applesauce per every two eggs you are supposed to use in a cake. I knew one could sup any oil for applesauce, but didn’t know about the egg sub till today. My friend Tina, who hosts our Pathfinder game with her husband Beau, is allergic to eggs. So I wanted to make something she could have as well.
This was the base recipe I used for the gingerbread cake. A half cup of applesauce rather than the two eggs, one-fourth a teaspoon of nutmeg added, and robust molasses rather than classic were my only tweaks. I baked it for forty five minutes rather than thirty five, but that could just be our oven’s temperature fluctuating. I cheated a bit in presentation and used premade whipped cream cheese icing once the cake was cooled off.
I actually managed to get out of bed before noon today. I even got a shower in before I started baking. It’s the longest night today, so I might stay up late to play a game with Mac.
Work this week is going to be weird. We work Monday and Tuesday, have Wednesday off for the secular holiday, and then work Thursday and Friday. I wish I could have taken an extra day off, but our Health Information Management leader just lost her husband to cancer. So we’re shuffling around between hospital locations to cover for her.
Anyway, therapy was hard yesterday. I am a bit manic still but not as bad as I was. I got more than three hours of sleep last night.
